Saffron (Crocus sativus), as a bulbous and perennial plant, does not grow from seeds. The underground bulbs of Saffron divide to produce new plants. Saffron flowers are grown in the autumn (around November). A Saffron flower has a purple color and the distinguishing feature of this flower is its three red stigmas, 25 to 30 mm long, hanging on the petals.
Saffron flowers grow in dry regions. The harvest and processing of Saffron is so time and energy-consuming. Every 500 Saffron stigmas weigh around 1 gram, the flowers should be handpicked, and the stigmas should be picked so precisely. Around the autumn (around November) when it is time to get the stigmas from Saffron flowers, farmers should start their work before sunrise and they only have a few hours before the Saffron flowers get opened due to the sunlight. After picking the flowers, farmers should take the stigmas from the picked flowers precisely (each flower only has three stigmas). Considering the fact that each 500 stigmas weigh about 1 gram, it takes about 167 Saffron flowers to get 1 gram Saffron stigmas.

Which Iranian Provinces and Cities Are the Best Saffron Producers?

The growth of saffron occurs in autumn and winter, followed by a summer rest period. As a result, saffron growth is being decelerated in regions with very cold winters. In addition, the saffron bulbs will suffer if there is excessive rainfall during the summer months and high air humidity. Therefore, the northern and southern provinces of Iran are not favorable areas for the cultivation of saffron as several semitropical regions in the Southern Hemisphere with sunny summers and mild winters are best suited to saffron cultivation. The best provinces of Iran’s Saffron cultivation and production are listed below:

  • 1. Khorasan Razavi Province

Razavi Khorasan is the first province that produces the most saffron in Iran with a cultivated area of 82 thousand hectares. Among the famous saffron-producing cities in this province, we can mention the cities of Torbet-e Heydaria, Mashhad, Khaf, Gonabad, Taibad, Bejestan, Zaveh, and Torbat-e Jam.

  • 2. Southern Khorasan Province

Southern Khorasan is the second biggest producer of saffron in Iran after Razavi Khorasan province with a cultivated area of 15 thousand hectares. The cities of Qaenat, Birjand, and Ferdows are famous centers of saffron production in South Khorasan.

  • 3. Northern Khorasan Province

Saffron is cultivated and produced in eight cities of North Khorasan Province. Faruj City with a cultivated area of 2,453 hectares and an annual production of about 14 tons of saffron is in the first place, Shirvan city is in the second place and Esfrain is in the third place of production in North Khorasan province.

  • 4. Isfahan

After the three provinces we mentioned above, Isfahan produces the largest amount of Iranian saffron. The cultivated area of this province is about 1,300 hectares and saffron is planted in most of the cities of this province including Shahinshahr, Golpayegan, Najafabad, Natanz, and Nain.

  • 5. Yazd

The cultivated area of Yazd province is about 900 hectares and the annual production of saffron is about 3 tons. The major saffron-producing cities in Yazd are Bahabad, Bafaq, Abarkouh and Mehriz.

  • 6. Kerman

Saffron cultivation is done in most cities of Kerman, including Sirjan, Zarand, Baft, Babak, and Bardsir. However, the yield of saffron in Kerman province is about 3 to 4 kg per hectare, which is very low, and it is necessary to increase the yield of saffron by using new methods of cultivation.

  • 7. Other Provinces

Other important provinces that are working in the field of saffron production in Iran include Fars, Hamadan, Qazvin, Lorestan, Khuzestan, Semnan, etc. These provinces all together produce about 2% of the total saffron in Iran. List of Iranian Saffron Exporters
