Rose is a perennial plant from the genus Rosa and the family Rosaceae. It has beautiful flowers in many different colors, mostly red and pink, and rose water is obtained from it. Most of its species are native to Asia, and some species are native to Europe, North America, and Northwest Africa. Damask Rose with the scientific name Rosa damascena is a deciduous shrub. Roses have been cultivated in Iran for a long time, and the edible part is the petals. This type of rose has leaves composed of 7 and rarely 9 serrated leaflets, and it seems to be a type of two fixed strains of Rosa gallica and Rosa canina. Some have mentioned it as a stable hybrid of Rosa gallica and Rosa moschata. Also, the petals of this flower are considered to be light pink or white.
In Which Regions of Iran Does the Damask Rose Grow?
At present, the cultivation of damask rose is done in 14 provinces of the country, the most important of which are Kerman, Fars (Meymand), Isfahan (Kashan), and East Azerbaijan, and in the other provinces, cultivation is more scattered.
How to Extract Rose Water from a Damask Rose?
Around the spring, Mohammadi flowers (Damask Roses) perfume the surroundings with a lovely fragrance. At this time, various traditional and industrial Rosewater workshops in various places, with distillation equipment, pick the flowers early in the morning, before the buds fully open, and distill them together with water steam in the boilers. The resulting essential oil that accumulates in the upper part of the fabric is separated, and after dehydrating, it is stored in closed jars, away from light, and the essential oil is offered in containers that are covered with felt. The remaining water from the distillation process is used as rosewater for various purposes. From every 3000 kg, about 1 kg of damask rose essential oil is obtained. Damask rose essential oil is one of the most famous perfumes that is widely used in perfumery and other cosmetic products (tooth powder and ointments) as a fragrance. Most of the essential oil of rose water is used as a syrup preparation element, and it is produced in Balkan countries, France, Turkey, Morocco, Spain, and Iran.
Damask Rose Extract – Rose Essence Industry in Iran
Ancient Iran has been famous for the rose industry since long ago, and this country is considered the main center of roses and aromatic plants. The majority of rose water production workshops are in Meymand and Firouzabad, Fars. The art of rose-water making was brought to Europe by the Arabs in the 10th century, and the first European country to employ this art was Spain. Due to the favorable weather conditions, the Damask Rose essence and rose water of Iran has a special quality, and since it is produced in small quantities and mostly consumed inside the country, it has world fame. Most of the Arab countries of the Persian Gulf basin procure different types of essences and rosewater from Iran.
Damask Rose Rosewater
Distilled water obtained from the distillation of roses is called rose water. The difference between Iranian damask rose water and other countries is that Iranian damask rose water is actually prepared by distilling fresh damask flowers with distilled water, while other countries' rose water is obtained by dissolving the essential oil of damask flowers in distilled water. When rose water is prepared artificially, the geraniol is highly soluble in water, but the esters remain on the filter. In other words, one of the characteristics of rose is the presence of hydrocarbons with 15 to 22 carbon atoms (22.9%). These hydrocarbons (esters) are largely omitted during the preparation of artificially distilled water by a strainer and are wasted.

Iran’s First Rank in the Production of Damask Rose and Cultivation Areas
Iran has the first place in the world for the cultivated area of Damask Rose (Mohamadi Flower), and by allocating 30 thousand hectares of agricultural land to the cultivation of this product, it produces more than 70% (70 thousand tons on average) of this product in the world. Despite the favorable position of the country in the production of roses, Iran has not been able to make a significant contribution to the export and trade of this product. Rose water is one of the main condiments of Iranian food, and the latest statistics indicate that 60 to 70 million liters of rose water are consumed in the domestic market every year. Perhaps it is the high demand in the domestic market that makes producers think less about export markets.
