Most of its species are native to Asia, and some species are native to Europe, North America, and Northwest Africa. Damask Rose with the scientific name Rosa damascena is a deciduous shrub. Roses have been cultivated in Iran for a long time, and the edible part is the petals. This type of rose has leaves composed of 7 and rarely 9 serrated leaflets, and it seems to be a type of two fixed strains of Rosa gallica and Rosa canina. Some have mentioned it as a stable hybrid of Rosa gallica and Rosa moschata. Also, the petals of this flower are considered to be light pink or white.

At present, the cultivation of damask rose is done in 14 provinces of the country, the most important of which are Kerman, Fars (Meymand), Isfahan (Kashan), and East Azerbaijan, and in the other provinces, cultivation is more scattered.
How to Extract Rose Water from a Damask Rose?
Around the spring, Mohammadi flowers (Damask Roses) perfume the surroundings with a lovely fragrance. In other words, one of the characteristics of rose is the presence of hydrocarbons with 15 to 22 carbon atoms (22.9%). These hydrocarbons (esters) are largely omitted during the preparation of artificially distilled water by a strainer and are wasted.
